Finnish-Canadian Berry Pie
There’s nothing quite like a homemade Finnish-Canadian berry pie fresh from the oven. A buttery, melt-in-your-mouth crust, generously filled with sweet-tart berries and topped with a creamy custard, makes this a timeless Nordic favourite.
Serve with vanilla ice cream or with a vanilla based topping (vaniljakastike).
Ingredients - Crust:

100 g Salted Butter

3/4 dl Sugar

1 Farm Egg
-
2 dl Wheat Flour
-
1 dl Fine Rolled Oats
-
1 tsp Baking Powder
Ingredients - Filling:

200 g Sour Cream (Or Plain Yogurt - Try Sheep Yogurt)

1 Farm Egg
-
3/4 dl Sugar
-
2 tsp Vanilla Sugar (Find it Here)

300-400 g of Farm Fresh Blueberries/Raspberries/Strawberries
Instructions
1. Whisk softened butter and sugar together until they become foamy. While still whisking, add the egg. Mix the flour, oats and baking powder separately and then add to the mixture.
2. Add the mixture into a medium oven dish. Sweep butter on the dish before adding the mixture.
3. Make the filling by mixing the sour cream/yogourt, eggs and sugars together.
4. Add the berries on top the crust and then add the filling.
5. Bake in the oven at 200 Celsius or 400 Fahrenheit for 25-30 minutes.
Pro Tips
Let the pie rest for at least for 30 minutes before serving for a better taste.
Use seasonal berries that you just picked from a local farm.
